Tosa

A cake as mellow as Tosa can only have been inspired by Mirandolina, the lively main character of ‘The Mistress of the Inn’ by Venetian playwright Carlo Goldoni. Courted by many wealthy clients, she eventually chooses to marry her waiter; she does not love him, but knows that he will not limit her freedom. That is the character that Tosa wishes to express: a cake with a classic identity given by the crunchy shortcrust pastry, yet spirited thanks to the unique frangipane cream.
